Low in Calories
Buffalo meat is low in calories, particularly as a red meat source. The average caloric content of a serving of buffalo (100 gms) is about 143 calories. Compare this to chicken and other red meats.

Low in Cholesterol
Buffalo meat is also lower than chicken and other red meats in the amount of cholesterol it contains.

Low in Fat
Being very lean, buffalo meat contains less fat than most other red meats, chicken and fish.

Good Fat
Buffalo meat contains three types of fats: monounsaturated (46 %), saturated (43%), and polyunsaturated (11%). Monounsaturated fats are often called the "healthy fats", because eating them lowers bad cholesterol. All three types of fat should be part of a healthy diet.

Omega - 3 and Omega - 6
BurgersBuffalo meat contains the "essential fatty acids", linoleic (omega - 3) and linolenic (omega - 6) fatty acids. These substances are necessary for us to eat but can not be made in our bodies and are thus, commonly lacking.

Their function is to assist the formation of cell membranes, aiding in the production of hormone-like compounds, and participating in immune and visual processes. Omega 3 fatty acids have been shown to help fend off Alzheimer's disease and reduce the likelihood of heart attacks.

High Protein Source
Buffalo meat is a rich source of complete protein containing all the essential amino acids in appropriate amounts. Each serving contains about 22 grams of protein which is then used in the body to build and repair tissues, produce enzymes and some hormones, and maintain cell membranes and components of the immune system.

Rich in Vitamins and Minerals
Rich in Vitamin B12, Seleniun, Zinc and Phosphorus, buffalo meat is also an excellent source of Iron, Vitamin B6 and Niacin, all of which are recommended daily.

No artificial growth hormones, no therapeutic antibiotics, chemical feed additives or animal by-product feeds are used. The bison's diet consists primarily of good quality pasture and hay.

Our ground buffalo is extra lean and contain no fillers, gluten, dairy products or seasoning. All of our meat has been government inspected.

Care and Storage of Buffalo Meat
Aging and packaging will determine the storage life of the meat. In any case, Buffalo should be stored in the coldest part of you refrigerator. Steaks and roasts that are still in their original packages can be kept safely in your fridge for up to four days. Keep fresh ground Buffalo for no more than two days. Fresh meat can be stored in you freezer for up to 12 months if properly packaged.

Remember that fresh Bison meat tends to be a darker red color than other red meats. Packaged Buffalo should be tightly sealed and wrapped in moisture proof materials, such as freezer paper, foil and polyethylene film. Bison is best defrosted in the refrigerator in its original packaging. You may decide to defrost the meat during cooking. Be sure to allow one-third to one-half more cooking time, depending on the size of the cut, if you decide to defrost this way.
